My favourite recipe is a Buddha bowl because you can use left over anything.

Rice, quinoa, cous cous or any other grain.

Seasoned tofu, marinated tofu, beans or chick peas.

Then for veggies - either oven baked pumpkin, or boiled veggies.

Salad of your choice

For sauce I use hummus, vegan Mayo or a vegan cashew cheese sauce.

I’m vegan so i don’t eat animal products.

The best thing about Buddha bowls is that you can choose anything you want as long as it follows that pattern.

one of my family's favorites is gnocchi, an Italian potato pasta we have kids in the house, m younger siblings and my cousins, and all of them love it.

-2 large potatoes

-salt

-2 teaspoons olive oil

-1 large egg

-1/4 teaspoon nutmeg

-3/4-1 cup all purpose flour

-1 cup finely grated Parmesan cheese

1. boil potatoes until tender but not breaking apart when pierced with a fork

2. mash potatoes and allow to cool on a work surface

3. form a well with the potatoes and add egg, salt olive oil and nutmeg to the center, add Parmesan and flour to the edges of the well.

4. knead everything together until it makes a soft dough that doesn't stick

5. roll into 1/2 in rolls and cut, optionally roll off a fork to create the traditional shape.

6. boil until they float to the top

7. serve with a sauce of your choosing, I find it is good with tomato sauces or pesto

Oh that looks easy! I'm all for easy recipes.

My favorite recipe is:

Cook 1lb ground beef on stove

Add 2 diced bell peppers and some chili powder

Cook until peppers are a little cooked (not completely soft like a sauté)

Add about 8oz of sour cream and some shredded cheddar cheese to it all melts together

Wrap in tortillas in a glass pan

Top with salsa, zesty Italian dressing, and a touch more cheddar

Broil on high for 3-5 minutes (until cheese is melted)

Or my easiest recipe:

Slice chicken breasts thin-way

Cover with oil, kosher salt, pepper (optional basil) and add in glass pan.

Mix assorted vegetables (I like carrots and broccoli, but also works well with zucchini, squash, potato, bell pepper) with olive oil, kosher salt and pepper.

Bake at 350. Chicken and most veggies take about 30 minutes. Broccoli is only 20 min and potatoes are about 40-50 min.

Yes, there is mock chicken (vegan chicken) or you can use seasoned or marinated tofu depending on the dish.

I’m vegan so I know all about it!

My favorite recipe right now is Millionaire Pie. My mom would make it all the time when I was growing up, and it just always brings back good memories. :)

Ingredients:

1 - 14 oz Eagle Brand Sweetened Condensed Milk

1/4 cup lemon juice

1 - 15 1/4 oz can crushed pineapple (drain juice)

1 - 8 oz cool whip

3/4 cup chopped pecans

1 heaping cup coconut

2 graham cracker crusts

Instructions:

Mix all together and divide evenly between both graham cracker pie crusts.

Chill overnight.

Enjoy!
