3 Summer Recipes You HAVE To Try!
Hello lovely friends! I hope you’re doing well. I’m sitting here in the morning sunlight as Mr. Baby eats his breakfast next to me with classical music playing in the background, and I gotta say, it’s a great way to start the day. I am so excited you all finally know that I am PREGNANT! Now I can tell you everything that’s going on in my life without editing out the most important detail.
We actually had a long weekend because Jacob had Juneteenth off, which meant lots of family time - my absolute favorite. Something I’m still getting used to about Florida, though, is that summer means rainstorms EVERY. SINGLE. DAY. Each afternoon, the skies simply open up with thunder and lightning and the rain comes down in sheets!
We invited friends over for Shabbat lunch and then by the afternoon when they were planning on leaving, the rain started! Luckily I had made enough food that everyone could stay for lunch AND dinner. On Sunday, which was Father’s Day, I took Jacob and Mr. Baby to the library and they LOVED it! We found a new library that has a whole section of toys for Mr. Baby to play with, which is wonderful, and Jacob got to explore the amazing selection of books available.
The most exciting part of the day was during Mr. Baby’s nap. Buy Buy Baby is going out of business and so their whole inventory is 40-60% off, and with a new baby on the way, we knew there were some purchases we wanted to make! We were able to get a new bassinet as well as some other important items and we saved a ton of money, which was so helpful. We finished off Father’s Day by heading to my parent’s and all the kids went swimming, then invited my dad over to have dinner with us. It was a great day all in all.
Monday was much more relaxed in the scheme of things. We hung around the house, took care of some chores, and played a Role Playing Game Jacob has been interested in for a while. It was actually quite fun and I ran the game - I was called the Game Master! I even found time to take a much-needed pregnancy nap. And by found time, I mean I sat down and without even meaning to, passed out.
But as the weather is getting hotter and hotter, I personally like as my food gets colder and more refreshing! As well, since I’ve been suffering with dysgeusia this pregnancy (a sour taste in my mouth), all I’ve wanted are fresh fruit and vegetables. So I wanted to share three recipes I love to make in the summer and that are perfect to throw together in the heat. I think you’ll love them as much as I do, and anyone can make them. Tasty Family Salad
This recipe is from a family friend who passed away some time ago, and every time I make it I think of him. I love the idea of people making this salad and his memory living on. It’s absolutely delicious and I make it at least once a week. It’s tasty and fresh, and people always love it!
Ingredients:
Romaine Lettuce
Tomatoes
Ripe avocado
Hearts of palm
Garbanzo beans
Corn/baby corn (depending on preference)
Baby cucumbers
Seasoned rice vinegar
Spray olive oil
Salt
Garlic powder
Instructions:
Chop up all vegetables. Cut the avocado in half and slice into cubes, then scoop out of the peel. Cut vegetables in whatever amounts you prefer, but make sure you have more romaine lettuce than anything else so it provides a good base. Spray some olive oil on the salad, then add enough seasoned rice vinegar to cover the entire salad (around 1/4 cup). Add garlic powder (around 1/2 tsp) and salt to taste. Mix together until the avocado makes the dressing really creamy. Enjoy!
Classic Guacamole
I think most people in the world love guacamole. I do too! It’s so tasty and makes a great summer snack. Knowing how to make good guacamole, though. That’s a challenge in and of itself. Try my recipe and tell me what you think!
Ingredients:
2 avocados
3 campari tomatoes (or any kind of tomatoes you prefer) diced
1/3 of a red onion diced
1 clove of minced garlic
Lime juice
Salt to taste
Cilantro if preferred
Instructions:
Mash the avocados and mix in everything else! The red onions add a special flavor to the guacamole that makes it tangy and delicious!
Israeli Salad
Ingredients:
An even amount of baby cucumbers and tomatoes
Parsley, chopped finely
Lemon juice
Olive oil
Salt to taste
Instructions:
Chop up the vegetables and mix them together. Try to get an even ratio of cucumbers to tomatoes. Add enough parsley that you’ll get a good amount in every bit. Add an even amount of olive oil and lemon juice to the mix. Add salt to taste. Enjoy the fresh flavors of summer!
As you all can see, I don’t use many exact measurements when I’m making salad recipes, but feel free to ask in the comments below if you’re unsure. And the nice thing about salads is that it’s pretty difficult to mess them up! If you make any of today’s recipes, let me know in the comments below!
